Food & Beverage Operations Manager



Responsibilities and essential job functions include but are not limited to the following:

  • To direct all operational activities towards supporting the Tjendana Resort Management Mission, Vision, and Core Values
  • To motivate, discipline, direct and supervise the work of the restaurant managers and assistant manager in the Food & Beverage outlets while maintaining effective relationship
  • To know the standards set by Tjendana Corporate (Corporate) and Tjendana Villas standards
  • To keep Villa Operations Manager promptly and fully informed of all issues (i.e. problems, unusual matters of significance and positive events) and take prompt corrective action where necessary or suggests alternative courses of action
  • To adhere to company standards and service levels to increases sales and minimize costs, including food, beverage, supply, utility and labor costs
  • To be involved in the Food & Beverage Outlets budget, and forecast and performance reports
  • To be knowledgeable of each properties information (hours of operation, etc) to answer guest inquiries To review the various Operations Manuals and incorporate adherence to the manuals into the training program
  • To ensure highest level of service in Food & Beverage Outlets by effectively responding to complaints, taking any and all appropriate actions to turn dissatisfied guests to return guests
  • To develop colleagues by providing ongoing feedback, establishing performance expectations and by conducting performance reviews
  • To establish guest database with preference records of regular guests
  • To build loyal customer base
  • To consistently follow and implement HACCP policies and procedures
  • To inspect Food & Beverage quality regularly
  • To carry out any other duties as and when assigned by the Management
  • To constantly monitor the colleagues\' appearance, attitude and degree of professionalism to insure their strict adherence to Tjendana Villas standards of quality service

Diploma/Degree in Food & Beverage/Hospitality Management Additional improvement programs in Food & Beverage an advantage

Oral and written fluency in English Ability to speak other language and basic understanding of local languages an advantage

Minimum 3 years experience in an international class hotel/ restaurant/bar
Minimum 2 year relevant experience in a similar capacity an advantage
